Citrus Honey glazed fried chicken wings

Citrus Honey glazed fried chicken wings

Marinade for chicken
500g chicken wings, cut into flats and drummettes
1 tbsp lemon zest
1 tbsp orange zest
1 ½ tbsp lemon juice
1 tbsp flaky salt
½ tbsp pepper
1 tsp thyme
cornstarch for breading
eggs for breading
flour for breading
oil for frying

Citrus glaze
¼ cup honey
1 tbsp brown sugar
½ cup orange juice
2 tbsp lemon juice
1 tsp thyme
¼ cup water
1 tbsp cornstarch
½ tsp chilli flakes


For the glaze
In a small saucepan on medium heat, add thyme and chilli flakes and toast for about 30 seconds to release oils and flavours then add water, honey, brown sugar and lemon juice. In a small bowl make a slurry of the orange juice and cornstarch then pour into the saucepan. Cook down until slightly reduced.

For the rub
In a bowl, mix lemon zest, orange zest, salt pepper and thyme. Stir together until fully combined then add the chicken and marinade for at least 1 hour. Heat up your oil to 175C. After marinating, add lemon juice to chicken and toss through.

Begin breading process by coating each wing in cornstarch, then egg then flour. Repeat the process until all your wings are coated. Fry wings until golden brown then toss immediately in the citrus glaze.

Serve with lemon wedges, fries and sour cream.
