Citrus Escabeche

Citrus Escabeche 
Recipe by: Chef Aphelele Dlungana 
1 tsp coriander seeds
½ banana shallot, sliced 
1 head of baby fennel, sliced
Zest and juice of ½ lemon
Zest ½ orange  and juice of the whole orange 
50ml white wine vinegar
40ml white wine
80ml Extra virgin olive oil
10ml sugar
A pinch of saffron
Place all the ingredients, except the olive olive, into a small saucepot. Bring to a boil, reduce to a gentle simmer and allow to cook for 5 minutes. 
Remove from the heat and add in the olive oil. Refrigerate before using
