Chocolate Wreath Cake
Recipe: Lazy Makoti
Makes: 1 cake

1¾ cups (440 ml) cake flour
2 Tbsp cocoa powder
1 tsp baking powder
½ tsp bicarbonate of soda
¼ teaspoon salt
½ cup unsalted butter
1 cup sugar
4 eggs
200 g milk chocolate, melted in a pot over hot water
2 tsp vanilla essence
1 cup milk
1 cup Clover Bliss Dessert
fresh raspberries and rosemary sprigs, to garnish
Preheat oven to 180 °C. Generously grease a bundt tin. Sift together the flour, cocoa, baking powder, bicarbonate of soda and salt.
In a separate bowl, using an electric mixer, beat the butter and sugar until thick and pale, about 5 minutes. Add the eggs one at a time, beating well after each addition. Gently fold in the melted chocolate until combined. Beating gently, slowly add the flour mixture until combined. Add the vanilla essence and milk - and mix thoroughly.
Spoon the batter into the bundt tin, leveling with the back of a spoon. Bake for 30-35 minutes or until a skewer inserted comes out clean. Remove from oven, turn out onto a wire rack, and leave to cool completely.
Drizzle the Bliss chocolate dessert over the cake. Decorate with rosemary sprigs and berries.
