Chocolate Finger Cookies

Chocolate Finger Cookies

120 g RAMA, at room temperature
¼ cup brown sugar
1 tsp vanilla essence
1¼ cup (160 g) cake flour
3 Tbsp cocoa powder
1½ tsp baking powder
½ tsp salt

100 g dark chocolate
25 ml chopped nuts
Preheat the oven to 190 °C. Line a small baking tray with baking paper.  Beat the butter and brown sugar until light and fluffy. Add the vanilla and beat until mixed.

Sift the flour, cocoa powder, baking powder and salt together and add to the butter mixture. Mix until just combined. Press the dough down onto the prepared baking tray, using the thongs of a fork to press it even.

Bake for 5 minutes. Reduce the heat to 150 °C and continue baking the cookies for another 10-15 minutes until the cookies are firm but not hard. Take out of the oven and let cool down on a wire rack.
Melt the chocolate in the microwave or in a bowl over boiling water. Dip one half of every cookie in the melted chocolate, let the extra chocolate drips off. Then place on baking paper and sprinkle the nuts over the chocolate while it is still soft.
