Chocolate Chip Cookies

Chocolate Chip Cookies

Makes: 8—10

Ingredients
Dry ingredients

1 cup bread flour

¾ cup cake flour
2 t salt
1 t Royal baking powder

Wet ingredients
1 cup oil

1 cup brown sugar
½ cup castor sugar
1 t vanilla extract or essence
1 egg whole
1 egg yolk

Ingredients to fold in
½ cup dark chocolate, chopped in small chunks

½ cup chocolate chips

Method
In a medium mixing bowl, sift all the dry ingredients together and set aside. In separate medium bowl add all the wet ingredients and cream vigorously with a wooden spoon until it's light and fluffy. Fold the dry ingredients into the wet ingredients until combined. Now fold in the two chocolates and allow the mixture to rest in the fridge for 1 hour.

Preheat the oven to 180 °C.

Grease a large baking tray. Once the mixture has rested you can portion them using an ice cream scoop. Place the portions onto the greased tray making sure there is ample space in between. When the mixture bakes it will spread and if there is not enough space in between them they will just become one large sheet of cookie.

Bake for 15 minutes. Remove and rest over a cooling rack to cool down.
Enjoy with a lovely cup of coffee.
