Serves:4-6
Prep time:

Main - Chicken &Marinade
1.5kg chicken thigh/breast cut into bite-sized pieces/strips/burger schnitzel
250ml Clover Fresh Milk
5ml lemon juice or vinegar
¼ cup of rice vinegar
1 tablespoon grated fresh ginger
1 teaspoon salt
½ teaspoon white pepper
1 teaspoon paprika
½ teaspoon garlic salt

Coating
1 ½ cup corn starch
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic salt
½ teaspoon celery salt
½ teaspoon white pepper
1 teaspoon dried thyme
1 teaspoon paprika
1 teaspoon baking powder
1 teaspoon chilli flakes

Instructions
In a mixing bowl, add all ingredients from “Main”, blend &marinade in fridge overnight
In a second mixing bowl, add all “Coating” ingredients together.
Toss the chicken in the marinade and let sit for at least 2 hours.
Coat the marinated chicken pieces  completely with the crispy coating, squeezing the coating with your hands around the chicken
Place fully coated chicken on a tray

First Deep-Fry
Heat oil to 180 C
Deep-fry chicken, do not overcrowd the oil, this will lower the temperature
3 to 5 min until golden brown
Remove chicken from oil &place on kitchen towel to absorb excess oil

Second Deep-Fry - Ready to serve
Heat oil to 180 C
Deep-fry chicken for second time, do not overcrowd the oil, this will lower the temperature
2 to 3 min until golden brown &extra crispy

Remove chicken from oil &place on kitchen towel to absorb excess oil
