Chicken Shawarma


Chicken shawarma

Serves 4
Cooking time: 20 minutes
800g boneless and skinless chicken thighs or breasts cut into bite-sized pieces
½ cup Clover Classic plain yogurt based dairy snack
1 ½ tbsp minced garlic
1 tbsp minced ginger (or finely grated)
2 tsp garam masala
1 tsp turmeric
1 tsp ground cumin
1 tsp red chili powder
1 tsp of salt
2 large eggpants
1 cup lettuce
1 cup tomatoes, chopped
¼ cup raita (cucumber, Clover Classic plain, mint and lime juice)
2 tbsp flour
3 tbsp cooking oil
salt and pepper to taste
4 tortilla wraps
Preheat oven to 190C.
In a large bowl, mix together the first nine ingredients and set aside to marinade for at least 2 hours.
While marinating, coat the eggplant in flour and fry in the oil untl crispy and golden brown.
Once the chicken is lovmarinated, bake in the oven for 20 minutes. 
Assemble the wrap starting with the raita and lettuce, followed by the tomato, eggplant and chicken.
