Chicken quesadillas with guacamole

Chicken quesadillas with guacamole

4 chicken breasts
3t canola oil
Salt and freshly ground black pepper to taste
¼ c smoky bbq sauce
4 garlic 4 cloves
15g coriander, roughly chopped
200g fresh corn
Tabasco chipotle to taste
200g mozzarella, grated
3 ripe avos
3 limes
15g coriander , roughly chopped
½ red onion , finely diced
1 red chilli , finely diced
100g cherry tomatoes , halved and some quartered
Salt and freshly ground black pepper to taste 
Add the chicken breasts to a pan with the oil heated over a medium heat. Allow the chicken to brown well before adding salt and pepper. Continue cooking until cooked through. Allow the chicken to cool until it can be handled then shred the chicken and return to the same pan along with the smoky BBQ sauce. Stir through to combine the ingredients along with the garlic. Cook for another 5 minutes then remove from the heat.
Combine the chicken mixture with the coriander and fresh corn. In a clean, non-stick pan add one of the tortilla wraps. Spoon in some of the chicken mixture then sprinkle over some of the mozzarella.
Top with the another wrap and toast for 2 minutes before carefully flipping over and cooking the other side. Once evenly toasted on both sides place on a board before cutting into triangles and serving with Tabasco Chipotle sauce on the side as well as the guacamole.
For the guacamole: Add the flesh of the avo to a large mixing bowl along with the lime juice, roughly chopped coriander, onion, cherry tomatoes and seasoning. Using a whisk or masher, mash to form a guacamole, serve with limes on the side.
