Chicken Pancake Parcels

Chicken Pancake Parcels

Recipe: Boitumelo 'ChewMe' Mogoai
Serves: 6-10 parcels depending on size

Baking time: 15 min

INGREDIENTS
2 cups cooked shredded chicken

250g cream cheese, room temperature
2 tsp smoked paprika
1 ½ tbsp mayonnaise
1 tbsp chives, chopped and some left whole for sealing
6-12 medium pancakes

METHOD
In a bowl, mix together the chicken, cream cheese, paprika, mayonnaise and chives to form a thick paste. Using a muffin tin, place the pancakes into the moulds with the sides overlapping and spoon some of the chicken mixture into the centre. Seal the top  of each parcel by twisting as though closing a bottle and use the chive as a string to tie the top. You can serve as is or bake in the oven.
If baking then pre heat oven to 200°C.
Twist the top of the parcels but do not add the chive as it will burn in the oven. Bake in the oven for 15 minutes or until slightly crispy then remove from the oven and tie with the chive as you would the unbaked parcel.
Serve hot or cold. Enjoy!
