Chicken Noodle Stir fry

Chicken Noodle stir fry

2 Chicken fillets, cut into thin strips
2 packs 2 min noodles, par cooked
½ cup soy sauce
1 tbsp ginger, chopped
1 tbsp garlic, chopped
½ carrot, julienned
¼ red pepper, julienned
1 tsp red chilli,  thinly sliced
1 tbsp fish sauce
1 spring onion, thinly sliced, plus more for garnish
2 tbsp cashews
honey to taste
1 tbsp cornstarch
coriander, garnish
oil for cooking
In a medium bowl mix chicken, 2/3 soy sauce, ginger, garlic, red chilli, fish sauce and some honey. Leave to marinade for at least 1 hour.
In a pan, (or wok preferably) on high heat, cook the chicken, carrots and red pepper for about 7-10 min reserving at least half of the liquid marinade. Add this marinade throughout the frying process to help coat the chicken to make sure it does not burn. Towards the end of the cooking process, in a small bowl, mix the remaining soy sauce with cornstarch then pour this into the pan then fry for about 2 min before adding the noodles and cashew nuts. Toss the noodles for 1 minute in the pan before removing from the heat and serving.

Garnish with spring onion and coriander.
