Chicken fried steak subs

Serves 4 

400g rump steak, cut into thin strips
500ml buttermilk
2 cups cake flour
salt and freshly ground black pepper to taste
Oil for shallow frying.
4 Mini loaves or mini baguettes
4T smoky BBQ sauce
1T Tabasco sauce
2 large pickles, finely chopped
2 red salad onions thinly sliced
½ baby red cabbage, thinly sliced
2T Maple syrup
Add the thinly sliced steak to the buttermilk and marinade while seasoning the flour with salt and freshly ground black pepper.
Remove each slice of steak from the buttermilk individually before coating in the flour to ensure they don’t stick together. Shallow fry the steak in the oil that has been preheated. Once golden brown and crisp place the steak on absorbent kitchen paper. Toast the tops of the buns in a pan or on a griddle pan.
Combine the BBQ sauce and Tabasco before tossing the steak in the mixture and stuffing inside the bun.
Combine the pickles, salad onions and cabbage in a bowl with the maple syrup and 3T of the pickling liquid. Use to top the subs.
