Chicken Dumplings
Recipe of Winnie Madikizela-Mandela – Hunger for Freedom by Anna Trapido
Serves: 6—8
Preparation: 10 minutes
Cooking: 50 minutes
Ingredients
10 chicken portions
1 onion, chopped
salt and pepper
1 green pepper, seeded and grated
1½ cups self-raising flour
1 t baking powder
1 t seasoned salt
½ cup milk
2 t chopped parsley
Method
Place the chicken and onion in a large saucepan and season with salt and pepper to taste. Pour in water to just cover the chicken. Bring to the boil, lower the heat and simmer until the chicken is soft. Add the green pepper and simmer while mixing the dough for the dumplings. Mix the flour, baking powder, Aromat and milk to form a soft dough.
Using a tablespoon, spoon the dumplings into the simmering chicken stew mixture. Sprinkle the parsley on top. Cover with a lid and simmer for 30 minutes or until the dumplings are cooked and fluffed up. Don’t open the lid before 20 minutes of the cooking time.
