Chicken Cheese Melt
Chicken cheese melt sandwich

4 chicken breasts, butterflied
Salt and freshly ground black pepper to taste
6T canola oil 
½ red pepper, thinly sliced
½ green pepper, thinly sliced
4 garlic cloves, finely chopped
2t smoked chilli flakes
Salt and freshly ground black pepper
4T parsley, roughly chopped
¼ cup sweet chilli sauce
200g mozzarella, sliced
½ cup mayonnaise
½ cup spicy atchar
1 loaf of unsliced bread, sliced on the long
4T butter
Butter lettuce
2 ripe tomatoes, sliced

Place the chicken breasts on a piece of cling wrap before covering with another sheet and gently pound using a meat tenderizer or a rolling pin until flattened.
Heat 3T of the oil in a pan over a medium heat, season the chicken with salt and freshly ground black pepper before adding to the pan and cooking for about 4 minutes per side. While the chicken is cooking begin cooking the veggies.
Add the remaining oil o another pan and add the peppers, garlic, chilli flakes and seasoning. Cook until the peppers have softened before adding the sweet chilli sauce and parsley.
While the chicken is still in the pan top them with the cooked veggies and finally the cheese slices. Cover with the lid allowing the cheese to melt.
Combine the mayo and atchar before adding some to a slice of the bread.  Add the lettuce and tomatoes then the chicken before topping with the second slice of bread.
Slice and serve.
