Chicken & Feta Pasta

Serves: 4-5
Cooking time: 15-20 min
 
Ingredients
Pasta, any type you wish
2 chicken fillets
500g Cherry Tomatoes
1 cup Tomato Purée
1 disk Clover Feta: Any Flavour
Olive Oil
2 tbsp Crushed Garlic
Salt
Pepper
Handful Fresh Herbs (Basil, Parsley), chopped
 
Method
In a large pot, bring to a boil Salted water with Olive Oil.
Once at a rumbling boil, add pasta and cook to package instructions.
In a pan heat olive oil and garlic, and fry chicken until cooked. Remove from the pan and set aside.
In the same pan, heat olive oil and add cherry tomatoes. Cook until tomatoes soften and split. Add garlic and cook further.
Add the Purée and chicken. Lastly add the Feta cheese, cover the pan with a lid, reduce heat and allow cheese to melt.
Stir well then add cooked & drained pasta. Add some reserved pasta water if sauce is too thick. Adjust seasoning if needed.
 
Finish with a generous helping of fresh herbs.
