Cheesy Apple Stack with bacon and mayo dressing

Cheesy Apple Stack with bacon and mayo dressing

Serves: 4
Preparation: 15 minutes
Cooking: 5 minutes
 
Ingredients 

12 strips streaky bacon

4 green apples, skin on
125 g Camembert cheese, cut in 4 slices
 
For dressing mix together:
6 Tbsp mayonnaise
1 tsp water
6 – 8 mint leaves, chopped
squeeze of lemon juice
 
To serve:
18 walnuts
micro herbs
 
Method

Fry the bacon in a dry pan over medium heat until crispy. Drain on paper towels.

Remove the core of the apples. Using a mandolin cutter, cut each apple separately in thin slices.
Stack each apple in its original shape. Slid 2 fried pieces of bacon and one slice of Camembert between the slices of each apple.
Top each apple with a piece of bacon. Drizzle with the mayonnaise dressing. Top with the walnuts and garnish with micro herbs.
