
Cheesecake Stuffed French Toast

INGREDIENTS
Bread
2¼ cups almond flour
6 eggs
1½ Tbsp baking powder
7½ Tbsp avocado oil
dash salt
6 Tbsp sweetener
2 Tbsp vanilla extract
½ Tbsp cinnamon
1 tsp maple or vanilla extract
Cheesecake Filling
¼ cup softened cream cheese
3 Tbsp powdered sweetener
1 Tbsp vanilla extract
1 Tbsp cream
1 tsp lemon juice
Egg Mixture
2 large eggs
⅔ cup almond milk
1 Tbsp vanilla extract
⅛ tsp cinnamon powder
⅛ tsp nutmeg powder
butter, for frying
Topping
1 cup whipping cream
¼ cup powdered sweetener
1 Tbsp vanilla extract
fresh strawberries (or berries of your choice)
METHOD
Bread
Preheat the oven to 180 °C. Grease a small loaf tin and line with baking paper. Mix all the ingredients for the bread in a bowl. Pour into the prepared loaf tin and bake for 15—20 minutes or until a skewer comes out clean. Allow to cool and slice the loaf into 12 slices (without crusts).
Cheesecake Filling
In a small bowl mix all the ingredients for the filling well. Spread the filling onto one side of 6 slices of bread. Sandwich with 6 more slices. Set aside
Egg Mixture
Whisk all the ingredients for the egg mixture until well combined. Heat some butter in a pan over medium heat. Dip the sandwiches into the egg mixture and fry, 2 sandwiches at a time, until brown on both sides. Repeat with the rest of the sandwiches.
Topping
Beat the cream, sweetener and vanilla together until stiff. Serve the French toast with the whipped cream and berries.
