Cheese, bacon and onion tart

Cheese, bacon and onion tart

200g bacon, chopped
1 tbsp vegetable oil
2 large red onions, sliced
3 cloves garlic, thinly sliced
½ tsp dried chilli flakes
¼ tsp ground ginger
1 cup strong coffee
½ cup balsamic vinegar
¼ cup golden syrup
¼ cup brown sugar
1 tbsp sage leaves
1 wheel, camembert, cut into  circular slices
1 pack rolled puff pastry
¼ cup pitted olives, cut in half
salt and pepper to taste
honey for brushing
chives for garnish


Preheat oven to 190C.
Lightly grease a tart pan with non stick spray then fill with puff pastry sheet ensuring pastry fills the entire pan. Cut off any access pastry. Using a fork, dock the pastry then blind bake for about 10 minutes just until the pastry is par baked. Remove from the oven and increase the heat to 200C.

In a cold pan add bacon then fry bacon to desired crispiness on medium to high heat then remove with a slotted spoon. To the same pan add oil, and with some of the residual bacon fat, sauté the onions until caramelised then add garlic, chilli flakes,  sage and ginger. Remove sage leaves (do not discard) after frying for about 2-3 minutes then add coffee, balsamic vinegar, golden syrup, sugar and fried bacon and simmer on low to medium heat to get a jam-like consistency.

Season to taste before adding three quarters of the bacon mixture into the par baked pastry. Place the camembert slices onto the bacon filing then finish off with the remaining bacon mixture and olives. Brush edges with honey and bake for 10-15 minutes or until golden brown.

Once baked, garnish with sage leaves and fresh chives
