
Cheese and Vegetable Burrito

INGREDIENTS
For the burrito
1 large whole-wheat tortilla
2 Slices Clover Cheddar Flavoured Full Cream Processed Cheese
1/3 cup black beans (or kidney beans) drained and rinsed.
1/3 cup sautéed vegetables (bell peppers, zucchini, sweet corn)
1 Tbsp salsa
1 Tbsp plain Greek yogurt (optional)
for the lunch box
A handful of seedless grapes sliced apples or strawberries.
A small handful of mixed nuts (almonds, cashews, walnuts) for healthy fats and protein.
Carrot and cucumber stick with a small tub of hummus or tzatziki for dipping.
A piece of dark chocolate or a granola bar for a quick energy boost.
METHOD
Warm the tortilla in a dry pan for 30 seconds on each side.
Lay the tortilla flat and place the Clover Processed Cheese Slice in the center.
Add the black beans, sautéed vegetables, and salsa on top of the cheese.
Add a small dollop of Greek yogurt if desired.
Fold the sides of the tortilla inward and roll it tightly into a burrito.
Wrap in parchment paper or foil for easy handling.
Pack the burrito into a lunch box with the fruit, nuts, veggies, and granola bar.
