Caroline & Josh’s Pap and Chunky Chakalaka

3 cups water
2 cups maize meal
2 tbls salted butter

3 tbsp oil
1 onion, roughly chopped
1 red pepper, cleaned and roughly chopped
1 yellow pepper, roughly chopped
1 carrot, peeled and grated
2 tomatoes, roughly chopped
1 tbsp mild curry powder
1 tsp sweet paprika
1 tsp ground coriander
1 x 410g can baked beans
1 x 410g can whole kernel sweetcorn, drained and rinsed
1 tbsp brown sugar
salt and pepper to taste

Begin by making the pap. Add water to a large saucepan and bring to a rapid boil. Stir in half of the maize meal and cover then reduce to a medium heat. Leave for 5-8 minutes. Remove lid and vigorously stir the pap to ensure all maize meal is well incorporated. It is important to mash the pap against the sides of the pap to remove any lumps. Sprinkle the remaining maize meal over the top of the pap and stir vigorously once more. Reduce to a low heat and steam the pap for 10 to 15 minutes with the lid on. Remove the lid and stir the butter through the pap. Turn off the heat, replace lid and allow the pap to steam with the residual heat. For the chakalaka, heat up the oil in a large frying pan on medium heat. Cook the onion, peppers and carrot in the oil until soft. Add the tomatoes and cook for 3-4 minutes. Add the spices and cook for another 10 minutes. Add a splash of water if the mixture is too dry. Add the baked beans and sweet corn and cook until warmed through. Season to taste with salt and pepper and add the sugar for a touch of sweetness. Cook for a further 5 minutes and serve with a generous amount of pap on the side. Garnish with some fresh coriander and enjoy!
