Caramelized Bananas

Selati caramelized bananas

Caramelized bananas
with salted butterscotch sauce, toasted almonds and vanilla ice cream

Serves 4
Recipe by Jonathan Moldan
4 bananas – peel and cut in half lengthways
4 Tbs Selati Demerara sugar
Butterscotch sauce:
4 tbsp butter
1 cup Selati Muscovado sugar
¾ cup heavy cream
1 tbsp vanilla extract
Pinch of sea salt
Vanilla Ice Cream
Toasted flaked almonds
Heat a dry pan to medium heat
Dip the flat side of the bananas into the sugar
Place into the pan and cook until the side is caramelized and golden.
For the butterscotch sauce
Melt the butter in a saucepan
Once melted, whisk in the sugar
Cook for a few minutes and add the cream
Season with flaked salt.
To plate
Place the bananas onto a plate
Drizzle with butterscotch sauce
Scatter with toasted almonds
Place a dollop of vanilla ice cream on the plate
Garnish with mint
