
Caleb’s Lunch Box Finger Meatballs

Serves : 10 lunch box finger meatballs
Preparation time: 10 minutes
Cooking time: 20 minutes
INGREDIENTS
finger meatballs
1 onion, finely chopped
2 cloves garlic, finely minced
500g extra lean beef mince
handful fresh parsley, chopped
1 tablespoon dried mixed herbs
1 tsp cinnamon
1 egg, large
¼ cup bread crumbs
1 tablespoon olive oil for frying
yoghurt dip
1 cup plain yoghurt
1 lemon, zest and juice
salt and pepper to taste
METHOD
Start with the finger meatballs. Place all of the ingredients into a mixing bowl and stir well with a wooden spoon to combine. Scoop up some of the mixture, about the size of a golf ball, and shape into an oblong finger shape. Place onto a plate and continue with the rest of the mixture, you should land up with 10 depending on size. Place a tablespoon of olive oil into a large frying pan and heat over a medium/high heat. Carefully add the finger meatballs to the pan and cook for 2 -3 minutes on each side or until beginning to brown. Carefully turn and repeat until the finger meatballs are brown all over and cooked through. For the yoghurt dip, combine all of the ingredients in a bowl and stir to combine. Serve the finger meatballs hot or cold with a drizzle of the yoghurt dip.
