Caesarstone inspired Pea flower cocktail

For the ginger and lime syrup
7cm piece of ginger, cut into slices
3 limes, peel removed and juiced
4T brown sugar
1 1/2 cups water

2 shots Pea flower infused gin (like 6 dogs)
Large ice cubes
Good quality tonic water

Add the ginger, lime peel, lime juice and sugar together with the water. Heat over a medium heat allowing the sugar to melt and reduce to form a thin syrup.Add the gin to a glass with the ice before adding 2T of the syrup and topping with the tonic water and serving.
