Brioche Dough

BRIOCHE DOUGH

Brioche Dough

Serving: 2/4 loaves 
Cooking time: 35-60min 
 
Ingredients 
Starter dough
500ml milk
100g cake flour
25g sugar
1 packet instant yeast
 
For your final dough mix
865g cake flour
100g sugar
20g salt2 eggs
100g butter salted 
Filling:
1 pack figs (about 8-10 figs)
1 cup Clover Classic custard
1 cup icing sugar
1 cup cocoa powder
2 cups variety of nuts
1 cup sugar
4 tbsp cinnamon
1 slab  dark chocolate
1 slab white chocolate

Method
Pre heat oven to 220 degrees
Heat your milk until it’s luke warm in the microwave or stove top. (don’t boil)
Add your milk to the sugar flour yeast and sugar 
Mix well and leave for 15min
Mix your sponge/starter dough in with your final mixture and knead your dough until smooth and elastic. 
Leave for 30min. 
Bake for 30min to an hour and remove from the oven once golden brown.
