
Clover Classic Braaied or Grilled Masala Prawn Salad

INGREDIENTS
500g large shell-on prawns, deveined
2 Tbsp garlic & ginger paste
3 Tbsp seafood masala
1 tsp curry powder
½ cup Clover Classic Tangy Mayonnaise Medium
zest and juice of 1 lemon
1 red chilli, chopped
1 tsp olive oil
salt & pepper to taste
For the salad dressing
½ cup olive oil
2 Tbsp vinegar
1 Tbsp honey
1 Tbsp Dijon mustard Salt and Pepper
1 Tbsp red chilli flakes
To serve:
2× 180g herb salad mix
2 avocados, thinly sliced
1 cup tomatoes, halved
1 red onion, sliced
fresh coriander
lemon wedges
METHOD
In a bowl combine all the ingredients for the marinade, add the prawns and stir until they are fully coated and allow them to marinate for 15 minutes. For the salad dressing whisk ingredients until well combined.
Grill prawns on a hot griddle pan, until cooked and golden. Assemble the salad bowl by placing mixed salad leaves on a large platter or bowl and drizzle over some dressing and toss together. Arrange cooked prawns, followed by avocados, tomatoes and red onion. Garnish with fresh dill and lemon wedges and serve.
