1kg Boerewors, cut into finger length pieces
1 onion chopped
2 cloves garlic, chopped
2-3 large carrots, peeled and cut into large pieces
2-3 potatoes, peeled and cut into medium cubes
2 tbsp paprika
2 tbsp tomato/curry paste
2 tbsp BBQ spice
1 tsp cayenne pepper
2 tbsp onion powder
2 tbsp garlic powder
2 cups liquid beef stock
2-3 tbsp soup powder
oil for cooking
salt and pepper to taste
3-4 tbsp coriander, more for garnish
In a hot pan/ pot fry the boerewors for 2-3 minutes then remove from the heat and set aside. Reduce heat to medium and in the same pot, add more oil and fry onions and garlic for 3-4 minutes before adding the paste and spices. In a bowl, coat the potatoes and carrots generously in soup powder before adding them into the pot to fry for 5 minutes. Add ¾ of the stock into the pot and simmer until the veggies have become soft. Add more stock if needed.
Once veggies are soft, return the boerewors into the pot and cook for 3-5 minutes before adding the coriander and serve.
Enjoy with pap, samp and any other side of your choice.
