Beef Stew with Seasonal Veg

INGREDIENTS
2-3 tbsp cooking oil
1 cup sliced mushrooms
1 onion, chopped
2 celery stalks, chopped to size of onion
1 green pepper, chopped
1 tbsp crushed garlic
1 tbsp ginger paste
1 tbsp ground cumin
2 tsp ginger powder
½ tbsp turmeric
1 ½ tbsp BBQ spice
1kg stewing beef
½ ltr beef stock
salt to taste
sugar to taste, optional*
METHOD
Set the stove to high then heat ½ of the oil in a saucepan. Sauté the mushrooms in the heated oil for about 5-8 min allowing them to release their juices and get slightly seared. Remove from the pan and set aside.
Reduce the heat to medium then add the onion, celery and green pepper and cook until soft before adding the garlic and ginger. Cook for 2-3 minutes before adding spices. Allow the spices to cook and even add extra oil if the mixture is too dry. This will make sure you do not have the grittiness of undercooked spices.
Add BBQ spice and cook for another 2 min before adding the beef. Stir everything thoroughly and cook for 2 min before adding the stock.
Cook, covered for 30min making sure there is enough liquid. If the liquid boils too rapidly, reduce heat and add some boiling water to aid the cooking. After the 30 minutes add the cabbage and cook for another 20 minutes before finishing with the mushroom and peas.
Switch off the pot, stir and allow to sit for 10 minutes before serving. Serve with side of your choice. Enjoy!
