Beef Stew with McCain

Beef stew with McCain Savoury Rice, McCain Mashed Butternut mash and McCain Cream Spinach
McCain Savoury rice (500g)*
McCain Mashed Butternut (500g)*
McCain cream spinach (500g)*
McCain stew mix (600g)*
McCain diced onions (250g)*
3T canola oil
Beef cubes 1 kg
4 garlic cloves finely grated
1 red pepper, roughly diced
1 X 400g tinned tomatoes
1 cup beef stock
Salt and freshly ground black pepper to taste
2T butter
Salt and freshly ground black pepper
Heat the oil over a medium heat before adding the meat and browning evenly on all sides. Remove the meat and add the frozen McCain diced onions to the same pot. Cook until tender then add the garlic and red pepper before cooking for 5 minutes.
Add the tinned tomatoes and beef to the pot along with the stock and bring to a gentle simmer. Season with salt and freshly ground black pepper before covering with a lid and slowly cooking for an hour.
10min before serving, add the frozen stew mix and cook until the vegetables are just tender.
While the stew is cooking prepare the McCain Sides as per packet instructions
Cook McCain Savoury Rice as per packet instructions
Cook McCain Mashed Butternut as per packet instructions
Cook McCain Cream Spinach as per packet instructions
Serve the stew over the prepared rice with a side of the McCain Butternut mash and Cream spinach
