Beef Curry

Serves: 3—4

½ onion, grated
3 t Red Masala Paste
1 t ground coriander
1 t ground cumin
1½ t turmeric
1 kg boneless beef, cut in large cubes
4 Tbsp Clover Classic Fat Spread
1 onion, sliced
2—3 cardamom pods
2 whole cloves
5 peppercorns
2 bay leaves
1 stick cinnamon
salt to taste
2 t tomato paste
¼ cup double thick plain yoghurt (at room temperature)
¼ cup coconut milk
60 ml ground almonds
1½ t garam masala
40 ml chopped coriander leaves
basmati rice and sambals, to serve
Mix the grated onion, masala paste, coriander, cumin, and turmeric in a large bowl, Add the beef cubes, mix well and marinate for 1 hour.
Heat the fat spread in a saucepan and stir-fry the sliced onion with the cardamom, cloves, peppercorns, bay leaves and cinnamon until the onion is soft.

Add the meat cubes, season with salt and fry until just turning brown.
Mix the tomato paste, yoghurt, coconut milk and ground almonds together and add to the meat.  Turn the heat down and simmer (not boil) for 1 hour or until the meat is soft. Add a little water if needed.

Add the Garam masala the last 5 minutes of the cooking time.
Sprinkle the coriander leaves over and serve with basmati rice and sambals.
