Beacon Easter Rocky Road

250g Beacon Bunny Chocolate & Popcorn Treats
100g Beacon Bunny Chocolate Nibbles
135g unsalted butter
150g milk chocolate
45ml golden syrup
10 Beacon mmmMallows Milk Chocolate Marshmallow Eggs, roughly chopped


Grease and line an 18cm square brownie tin with baking paper. Place Beacon Bunny Chocolate & Popcorn Treats along with Beacon Bunny Chocolate Nibbles in a large freezer bag and bash with a rolling pin until they're broken. You want a mixture of different sized chunks and not too fine. Next, Melt butter, chocolate and golden syrup together in a large saucepan over gentle heat and stir constantly until smooth, then remove from heat. Set aside to cool. Add ¾ of all the crushed Beacon treats and all of the chopped mmmMallows to the chocolate mixture, stir until everything is coated in chocolate. Tip the mixture into the lined brownie tin and spread evenly. Top with remaining crushed Beacon treats and Chill in the fridge for at least 3-4 hours. Remove from the fridge and cut into 12 squares and serve.
