BBQ Rib Gatsby

Serves: 4-6
Cooking time: 2hours 45 min

2 baguettes or French loaves
2 racks pork ribs
2 tsp garlic powder
2 tsp paprika
2 tsp salt
1 tsp ginger
1/2 tsp cumin
1 tsp chilli powder
2 tbsp cooking oil
1 cup bbq sauce
½ lettuce
1 packet slap chips
2 onions
2 tbsp chilli flakes
2 cups buttermilk
Salt and pepper to taste

Preheat oven to 180°C.
Peel off tough membrane that covers the underside/bony side of the ribs. Place on a baking sheet or tray lined with foil (or parchment paper). 
Combine together garlic powder, ginger, paprika, salt, cumin and chili powder. Sprinkle seasoning generously over ribs. Rub the seasoning all over the ribs on both sides. Drizzle with oil and cover tray with foil and bake for 2 hours.
During the last 5 minutes of cook time, remove ribs from the oven, remove foil and spread the tops of the ribs generously with the barbecue sauce.
Increase oven temperature to 240°C. Return ribs to the oven, uncovered, and bake for a further 10 minutes. Change oven settings to or grill on medium-high heat to lightly char and caramelise the edges (about 3 minutes).
Rest for 10 minutes to allow the juices to recirculate back into the meat before slicing.
While resting the ribs, mix flour with salt, pepper and chilli flakes. Dredge onion rings first in buttermilk then into the flour then fry until golden brown.
Assemble gatsby in loaf starting with lettuce, ribs, slap chips and top with the onion rings. Drizzle remaining bbq sauce and serve.
