Basil and Feta mufifns

1 recipe 3 ways (will make muffins, savoury waffles and pancakes)
INGREDIENTS
2 cups flour
2 tsp baking powder
½ tsp salt
½ tsp baking soda
1 egg
1 cup amasi
¼ olive oil
¾ cup Clover Feta (crumbed)
½ cup fresh tomatoes (chopped and deseeded)
3 tbsp basil (finely chopped)
½ sugar
METHOD
In a large bowl, mix the flour, baking powder, sugar, salt and baking soda. In a separate bowl combine the egg, amasi, and oil. Fold the wet ingredients into to the dry ingredients until just combined. Gently stir in the cheese, basil and tomato.
Lightly grease your muffin trays and fill three quarters of the way. Bake in a 180C oven for 15-20 min or until a skewer inserted in the centre comes out clean.
You can also scoop the mixture using the ladle into a lightly greased waffle machine (for waffles) or into a non-stick pan (for pancakes).
Serve warm with butter.
