BAKERS® Lemon Cheesecake Pots

Ingredients
6  BAKERS Lemon Creams®, split and filling removed ( crush the base and top )
1 tbsp milk
1 tbsp lemon, juice and zest
1 cup cream cheese
¾ cup icing sugar            
1 cup cream, whipped
1 cup meringues, broken into shards
8 BAKERS Nuttikrust® biscuits, crushed into small chunks
½ cup desiccated coconut, toasted
 Fresh mint to serve
 
Method 
Split your BAKERS Lemon Creams®, and melt the lemon filling in the microwave with the milk. Combine the cream cheese, lemon, melted lemon filling and icing sugar in a bowl and beat well until completely combined.
Fold in your whipped cream gently. Combine the crushed BAKERS Lemon Creams® crumbs with the coconut.

Start assembling the pots with a base of crushed BAKERS Nuttikrust® biscuits, followed by the lemon cream cheese, followed by meringue shards, and lastly coconut biscuit crumb mix, and repeat until your glasses are full. Finish with a layer of meringue shards, and garnish with fresh mint.
