Bakers Choice Assorted® Banoffee Pots with Caramel Popcorn

INGREDIENTS
 
Bottom of Jars
200 g Bakers Choice Assorted® Biscuits
 
Caramel Toffee (if you don’t have time to make this use a tin caramel)
1 can sweetened condensed milk 
1/4 c dark brown sugar 
1/4 c butter
 
1 cup heavy whipping cream
2 Tbsp icing sugar
1 tsp vanilla extract
3 bananas, thinly sliced
Squeeze of lemon juice
cocoa powder 
dessert jars 
 
To Serve
Caramel popcorn 
 
METHOD
 
Caramel Toffee
Stir the butter and brown sugar in a heavy bottomed saucepan on low heat until melted. Add the condensed milk, turn heat up to medium and cook, stirring constantly until mixture comes to a boil and thickens and darkens into a light golden brown colour, remove from heat. About 10 – 15 minutes.
 
Assembling
Whip the cream with the icing sugar and vanilla until soft peaks form.
In a separate bowl, toss the sliced bananas with a squeeze of lemon juice, this will help prevent browning.
Assemble the jars by placing the bananas at the bottom of the jar, followed by the toffee and then your favourite Bakers Choice Assorted Biscuits. Keep layering and top off with whipped cream. Sprinkle with popcorn and lightly dust with cocoa.
