Baked Fish Pie Jacket potatoes

4 large potatoes
4 tbsp oil
2 T Butter
300ml Clover Fresh milk
1 bay leaf 
3-4 peppercorns 
200g haddock/hake/tinned mackeral
2 Tbsp flour 
zest and juice of 1 lemon
handful fresh dill
handful cheddar cheese
Heat the oven to 200C. Prick the potatoes with a fork, rub them with oil and season with salt and pepper. Place them onto an oven tray and bake until cooked through. 
Once cooked, scoop out some of the flesh and mash with a knob of butter, season with salt and pepper. 
Warm the milk in a wide saucepan and add in the bay leaf and peppercorns. If you using haddock or hake, add in the fish to poach in the milk until just cooked. Scoop the fish out as well as the peppercorns and bay leaf. 
Mix the flour with the butter and add it to the milk mixture. Keep whisking as the mixture starts to thicken. Remove from the heat. Add in the lemon zest and a little juice as well as the dill. Add the fish to the thickened milk mixture and taste for seasoning. 
Spoon the fish mixture into the potato shells and top with the mash and cheese. Place onto a baking tray and bake for 20 minutes until the cheese and mash is golden. Serve warm.
