Baked Feta Pasta

Baked Feta Pasta

Serves: 6

2 packets cherry tomatoes
2 shallots, quartered
3 cloves garlic, crushed
60 ml extra virgin olive oil
salt flakes to taste
chilli flakes or black pepper
1 (200 g) block feta cheese
3 sprigs thyme 
280 g pasta
zest of ½ - 1 lemon
basil leaves for ganish

Preheat oven to 200 °C (180 °C fan).
In a large ovenproof pan or medium baking dish, combine tomatoes, shallot, garlic, and most of the olive oil. Season with salt and chilli flakes or pepper and toss to combine. 
Place the feta into the centre of the tomato mixture and drizzle top with remaining olive oil. Scatter thyme over tomatoes. Bake for 40 minutes, until the tomatoes are bursting and feta is golden on top. 
Meanwhile, in a large pot of salted boiling water, cook pasta according to package instructions. Reserve ¼ cup of the pasta water before draining.
Add the cooked pasta, reserved pasta water, and lemon zest to the pan with tomatoes and feta, and stir until completely combined.

Garnish with basil before serving.
