Baked beans with pork sausage

Baked beans with pork sausage

Serves: 6-8

2 tins baked beans
1 tbsp sunflower oil
4 shallots, halved
2 cloves garlic, sliced
200g bacon, chopped
500g pork sausages, cut into small pieces
1 tbsp cumin spice
1 tsp fresh thyme
1 tbsp smoked paprika
½ chilli flakes
sour cream to garnish
toasted ciabatta to serve


Preheat oven to 200C
In an oven-proof pan on medium heat, add sunflower oil,  then fry the shallots cut side down until beautifully charred. Remove the onions from the pan then add the sausage and bacon and fry until golden brown as well.

Once cooked, add the onions back into the pan followed by garlic, all the spices and herbs and cook for for 3 min. Stir in the baked beans and transfer pan to oven and bake for 10-15 min.

Serve with toasted ciabatta bread and a generous dollop of sour cream.
