Bacon Jam for Beef Burger Sliders

Bacon Jam, perfect for a topping on Beef Burger Sliders

Makes 750ml jar

For the Bacon Jam:
1 Tbsp (15ml) cooking oil
500g streaky bacon
3 small red onions, finely chopped
4 garlic cloves, finely chopped
1 tsp (5ml) smoked paprika
½ tsp (2.5ml) chilli flakes
½ Cup (175ml) Bourbon Whisky
½ Cup (175ml) Maple Syrup
¼ Cup (60ml) Balsamic vinegar
¼ Cup (60ml) Selati castor Snow

For the Beef Patties:
500g Thick Boerewors
1 Tbsp (15ml) olive oil
1 Tbsp (15ml) salted butter
Season with salt and freshly ground black pepper
10 slices Emmental cheese

To finish off and garnish:
8-10 slider burger buns, halved and toasted in a pan
1 Handful of baby salad leaves, washed
2 beef tomatoes, sliced
Micro herbs for garnish, washed

1. To make the bacon jam, add the oil to a hot pan and fry the bacon in batches until crispy and golden brown. 
2. Remove and drain on paper towel before frying the next batch. 
3. In the excess cooking fat, fry the onions and garlic until translucent and fragrant. 
4. Add the bacon back to the pan along with the paprika and chilli flakes and cook until well combined. 
5. Add the whisky, maple syrup, vinegar and Selati castor sugar to the pan, turn down the heat to a gentle simmer and allow to cook and caramelise completely. 
6. This will take about 30-40 minutes to cook down completely and become like a jam.
7. Place into a food processor and pulse until the desired consistency or leave it chunky.  
8. Store in an airtime container and store in the fridge for up to 3 weeks. 

1. To make the beef patties, pull a golf ball sized amount of sausage meat out of the sausage casing and press into small patties. 
2. Heat a frying pan and add the oil and butter until the butter has melted. Fry the patties until a crust has formed and flip to cook the other side.
3. Add a slice of Emmental cheese to the flipped over burger patty and allow to melt while the bottom cooks for 4-5 minutes.
4. Place the patties on a plate and cover with foil to keep warm.

To serve: Assemble the burgers by placing the washed lettuce, a slice of tomatoes, the cheesy beef patty and top with the delicious bacon jam and micro herbs. Serve immediately whilst warm. 

For best results, use Selati!
