Apricot & Chilli Glazed Chicken
Woolworths chicken value pack about 2kg 
For the glaze
2T canola oil
6 garlic cloves, finely grated
5T smooth apricot jam 
3t smoked chilli flakes
Enough water to just cover the chicken
Salt and freshly ground black pepper to taste
Woolworths Greek salad to serve

Heat a griddle pan over a medium heat. Add the chicken pieces to the griddle pan, skin side down. Allow the chicken to really char and get smoky before turning over and cooking the other side in the same way. Once evenly and well charred set the chicken aside.
Heat a large, heavy-based pan over a medium heat before adding the oil and garlic. Cook gently being careful not to burn the garlic then add the jam and chilli flakes. Allow the jam to melt slightly before adding the chicken and coating. Pour in the water and stir through before simmering, reducing the water while the chicken cooks. Once most of the water has dissolved the chicken should almost be falling off the bone.
Let the jam caramelise on the chicken becoming sweet and sticky. Serve the chicken with the Greek salad!
