Aniseed pumpkin fritters
Aniseed pumpkin fritters with thyme and orange caramel

Easy to prepare
3 cups cooked butternut
2 cups self raising flour
15ml baking powder
5ml Anise seeds
Enough oil for deep frying
1 liter Clover Fresh milk
1 cup sugar
10ml corn flour, mixed with a little water
10ml fresh thyme leaves
Zest and juice of 1 orange
Mix the butternut, eggs, flour, baking powder and salt together until it forms a batter.
Deep fry teaspoon fulls until golden brown. Keep warm.
Heat the milk, sugar, butter and salt to boiling point.
Add the maizena, thyme and orange zest and juice. Cook for 5 minutes.
Pour the sauce over the fritters and serve.
