
Aloo Tikki (Spiced Potato Patties)

Ingredients
4 large potatoes, peeled and cubed
1 large onion, finely chopped
3 T ghee
1 green chilli, finely chopped
3 T coriander, finely chopped
3 T mint, finely chopped
½ t turmeric
½ t chilli powder
½ t chaat masala
1 t ground cumin
1 t garlic paste
1 t ginger paste
2 T corn flour
4 T breadcrumbs
salt to taste
6 - 8 T oil for shallow frying
Method
Boil the potatoes in water until soft. Mash the potatoes and leave aside to cool.
Fry the onion in the ghee until golden brown.
Mix the fried onion and the rest of the ingredients, except the oil, with the mashed potatoes. The mixture must be firm and not sticky.
Divide the mixture into 8—10 equal parts and shape each into a flatten pattie shape.
Heat the oil in a shallow pan and add the tikkis (potato patties) well spaced out.
Fry on each side until golden brown and drain on paper towels
