All Gold Limited Edition Fancy Fries

1kg sweet potato fries, cooked according to package instructions

For the cornfetti sprinkle
2T butter
2 cups corn
3 cloves garlic
Salt and freshly ground black pepper to taste
1 red pepper, diced
1 red onion, finely diced
1 red chilli, finely chopped
10 slices smoked provolone
2 stalks spring onion, thinly sliced

Heat the butter over a medium heat before adding the corn and garlic. Cook until the corn begins to char slightly and the garlic is cooked.
Season lightly before adding the peppers, onion and chilli. Toss to cook for 5 minutes before setting aside.
Using a large tin with the bottom removed, set over a serving platter, begin layering the sweet potato fries, cornfetti sprinkle and slices of the provolone cheese. Continue layering until all the fries, cornfetti and cheese has been used.

Place the tin in the oven to cook at 200C for 15 minutes, carefully remove the tin revealing the layered tower, garnish with the spring onion and serve with All Gold tomato sauce
