
Air-Fried Mince Samosas with Store-Bought Samosa Leaves
INGREDIENTS
For the filling:
500g lean minced meat (chicken, turkey, or beef)
1 onion, finely chopped
2 garlic cloves, minced
1 teaspoon ginger, grated
2 green chilies, chopped (adjust to taste)
1 cup peas (fresh or frozen)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
Salt and pepper to taste
Fresh cilantro, chopped (optional)
1 tablespoon olive oil
For assembly:
Store-bought samosa leaves (also known as pastry sheets)
Olive oil spray or a little oil for brushing
METHOD
Step 1: Make the Filling
1. Heat olive oil in a pan over medium heat.
2. Add cumin seeds and allow them to sizzle for a few seconds.
3. Add chopped onions and sauté until golden brown.
4. Stir in garlic, ginger, and green chilies; cook for another minute.
5. Add minced meat, breaking it apart, and cook until browned through.
6. Mix in peas, coriander powder, garam masala, salt, and pepper. Cook for about 5-7 minutes until everything is well-combined.
7. Remove from heat and stir in chopped cilantro if desired. Let the filling cool.
Step 2: Assemble the Samosas
1. Take a store-bought samosa leaf, and lay it flat on a clean surface.
2. Folding Instructions:
Create a Cone:
Fold the samosa leaf in half to form a triangle, then press the edge to seal.
Lift the pointed end and open it slightly to form a cone.
Fill the Cone:
Spoon about 1 tablespoon of the prepared filling into the cone, making sure not to overfill.
Seal the Samosa:
Wet the edges of the open flap with a little water using your finger.
Fold the flap over the filling, and press it down firmly to seal.
You can create pleats along the edge by folding the top flap to ensure it’s securely sealed.
Step 3: Cooking the Samosas
1. Preheat your air fryer to 180°C (356°F).
2. Lightly brush or spray the prepared samosas with olive oil to help them crisp up.
3. Place them in the air fryer basket in a single layer (don’t overcrowd).
4. Air fry for about 12-15 minutes, or until they are golden brown and crispy, flipping them halfway through for even cooking.
Step 4: Serving
Serve warm with your favorite chutney or dipping sauce.
