Mini Nacho gatsby

Mini Nacho gatsby

1 pack nacho chips
1 ½ cup cheddar cheese, grated
2 tomatoes, chopped and deseeded
1 cup cooked mince
(mince ingredients- ground beef, spices, garlic and BBQ sauce)
1 large onion, chopped
1 cup guacamole
1 cup sour cream
½ cup shredded lettuce
1 french loaf
BBQ sauce to taste

On a baking tray, align about 6-8  nacho chips to form single lines the length of the french loaf. Top each line with some cheese, mince, BBQ sauce and onion. Repeat the process to create 2-3 layers then place the tray in the oven to bake just until the cheese is fully melted. Once cooked, remove the tray from the oven and remove the nacho layer from the tray and place onto the french loaf that has already been lined with shredded lettuce. Sprinkle some chopped tomato onto the gatsby followed by the guacamole.
Finish it off with a generous amounts of sour cream  and serve. Add more BBQ sauce if needed.
