Chicken and Bacon Pasta with Creamy Tomato Sauce made with Clover Classic Plain Dairy Snack

INGREDIENTS
200 g spaghetti
400 g chicken breast, at room temperature
1 tsp paprika
salt and pepper to taste
3 Tbsp olive oil
4 – 5 cloves garlic, finely chopped
3 – 4 Roma tomatoes, diced
⅓ cup tinned chopped tomatoes
125 g button mushrooms, sliced
¼ cup bacon cubes, fried
⅓ cup Clover Classic Plain Dairy Snack
1 pack of fresh spinach
parmesan shavings 

METHOD
Prepare the pasta according to the directions on the package. Drain and set aside.
Season the chicken with the paprika, salt and pepper. Heat 2 tablespoons of the olive oil in a deep-frying pan and fry the chicken on both sides until cooked through. Remove from pan and set aside.
Add the remaining olive oil to the pan, add the garlic and cook for 1 – 2 minutes on medium to low heat until garlic starts to brown and become soft. Add the tomatoes, mushrooms and bacon to the pan, season with salt and pepper. Allow to cook for about 5 minutes. 
Cut the chicken into thin strips, add to the tomato mixture and cook until warmed. Reduce the heat to low and add the tinned tomatoes and Clover Dairy Snack. Stir until combined, then add the cooked pasta and stir.
Once pasta is well coated in the sauce, add the spinach to the pan and cover with a lid. Allow to sit for 2 – 3  minutes or until spinach wilts. Stir occasionally to help spinach get covered.
Spoon into a serving dish, top with parmesan shavings and enjoy!
