Clover Bliss Double Cream Custard and Caramel Tart

Serves: 4
Preparation time: 30 minutes, plus 3 hours to set

INGREDIENTS
For the base:
200g coconut biscuits, crushed
½ cup butter, melted
 

For the filling:
2 ½ cups Clover Bliss Double Cream Custard
1 cup fresh cream, whipped
3 tbsp caramel
1 Tbsp gelatine powder
¼ cup water

To serve:
fresh mixed berries
fresh mint sprigs
edible gold leaf

METHOD
For the base: Start by adding biscuits and melted butter into a bowl and mix until well combined, then transfer it to a 20cm loose bottom tart tin. Press the mixture into the base and up the sides of the dish. Place it into the freezer for 10 minutes.

For the filling: Place water in a small microwave safe bowl, sprinkle over gelatine and allow it to bloom for about 5 minutes, then microwave for 10 seconds and stir until the gelatine has dissolved, set aside to cool.

In a bowl combine Clover Bliss Double Custard, cream and caramel, then gently whisk in cooled gelatine. Pour the mixture into the prepared dish, then place into the refrigerator and chill for 3 hours or until set.

Once the tart is set top with fresh berries, mint and edible gold leaf.
