Winter Puddings with Chef Jenny Morris

Today’s episode is packed with hearty desserts that will help keep away those winter blues! We catch up with the wonderful Celebrity Chef Jenny Morris.
Dietitian Mignon Jordaan and Marketing Manager at Ascendis Pharma Phiwo Mabunu join us on the show to chat about gut issues which may call for lifestyle changes or an over-the-counter solution.
The first recipe is a decadent Self-Saucing Toffee Apple Pudding, served with Clover Fruits of The Forest Strawberry and Cranberry with Cereals and Seeds for an extra crunch. Pro tip: macerating the apples in lemon juice allows the natural sugars from the apples to develop, which adds to the flavour of the sauce.
Have you ever tried a sweet arancini ball? The next dessert is Arancini Two Ways - Sweet & Savoury. The sweet version is a Milk Tart Arancini and the savoury is Cheesy Sweetcorn.
Forget store bought jam, try Chef Jay’s Quick Jam recipe at home! His recipe uses the 2:3 ratio – that is 3 parts fruit and 2 parts sugar. This method works for almost all fruits.
Top tip: freezing the fruit beforehand breaks down the cell walls which intensifies the flavours.
Next up is a Jam Roly-Poly recipe. Did you know that this steamed pudding originated in the 19th century when there weren’t any baking dishes available? When wrapping the log, do not wrap it too tightly as the pudding will puff up when baking.
Last but not least in the kitchen, we have a Sticky Toffee Date Pudding. This lactose free dessert uses fresh dates, and can be made vegan by substituting the custard for vegan ice cream.
