Mandela Day with Zolani Mahola

Yesterday was Mandela Day, a celebration of our collective power to create a global movement for good and make a positive impact on the world. This month, we reflect on the immense impact that Madiba has left on all our lives as a rainbow nation and family.
We are joined by Zolani Mahola, or The One Who Sings, and her all-women band ‘The Feminine Force’ for two beautiful performances from her first solo album, ‘Thetha Mama’. She ends the show off with a rendition of ‘Li Li Li Li’, performed for the first time ever!
In the kitchen, we bake a decadent Coffee and Blueberry Bundt Cake that is the perfect treat with coffee or tea. We use Jungle's Oat Bran in this recipe which works fantastically in baking! It has a lovely, natural flavour and packed with fibre. Pro tip: Add the blueberries after pouring the batter to ensure that the berries don’t all sink to the bottom of the cake.
As a main, we bring you one of Mandela’s favourite meals: Oxtail Stew with Dumplings. We make this recipe on the stove, but making it in a potjie would be ideal. It is important to cook the oxtail on a low heat to allow it to tenderize.
The dessert on today’s menu is Malva Pudding! This delicious, sponge-drenched pudding is in a decadent sauce that is traditionally served with custard or cream.
