African Cuisine Week part 1
Tuesday 24 May
The month of May is Africa Month, which commemorates the founding of the Organization of African Unity (OAU) in 1963. Our beautiful continent was the first to focus on continental unity and to encourage nation building through unity and freedom from oppression.
Today on the show, we use food to celebrate this unity – because what better way is there to bring people together than sharing delicious meals?
Our guests are Clara Kapelembe-Bwali and Lulu Haangala-Wood, who are both foodies all the way from Zambia. Clara is the founder of Black Garlic, a food photography and food styling business. Lulu and her husband founded Wood Kitchen, a popular food blog.
In the kitchen, Chef Tumi will be cooking up Kasi Magic Kota, Mozambican Style Peri-Peri Prawns, and West African Inspired Beef and Peanut Stew. To end things off, Tumi shows us how to prepare a delicious Layered Sago Pudding and Chef Jay bakes a Moroccan M’hanncha (also known as a snake cake).
Let us know on social media, what is your favourite proudly African dish?
