Yoghurt Cupcakes

Ingredients
125g unsalted butter, softened
125g caster sugar
3 eggs, separated
1 lemon, zested and juiced
1 teaspoon baking powder
200g Clover Fruits of the Forest, Strawberry flavour
Desiccated coconut to coat the muffin tray
1/3 cup icing sugar
100g Strawberries, roughly chopped


Method
Cream the butter and sugar until pale and fluffy before adding the egg yolks one at a time until well incorporated.
Add the zest and juice of the lemon and mix through as well. Sift in the flour as well as the baking powder before folding through. Add the yoghurt to the mixture. Beat the egg whites until it reaches stiff peak stage before folding through the batter. Grease a muffin tray coating the inside with the coconut then fill with the batter.
Bake for 20 minutes in an oven preheated to 180°C or until a cake tester comes out clean after testing.
Whilst the cupcakes are baking prepare the igloo by mashing the icing sugar with the strawberries until well combined.
