Woolworths Pumpkin and spinach balls

2 Cups Pumpkin
1 t olive oil
1 T brown sugar
Salt and pepper
½ cup spinach
½ cup ricotta
½ t ginger
½ cup carrot, grated
¼ cup onion, grated
½ t garlic, crushed
½ T cumin
¼ cup bread crumbs
¼ tsp cayenne pepper
2 T flour


  1. Preheat the oven to 180˚C and line 2 baking trays with baking paper
  2. Cut the pumpkin in even sizes and place in a mixing bowl, drizzle oil over. Add the brown sugar, salt and pepper – place on a baking tray. Bake in the oven for 25-30 minutes or until tender.
  3. While cooking the pumpkin, Blanche and refresh the spinach.
  4. Place the cooked pumpkin in a bowl, mash it with a fork until nice and smooth.
  5. To the puree, add feta, ricotta, ginger, carrot, onion, garlic, cumin, bread crumbs, cayenne pepper and flour – stir until all is well combined.
  6. Roll the batter into even sized balls, place on the second baking tray and bake for approximately 25 – 30 minutes. Turn it every 10 minutes bake until golden brown.
